Mmm.

This just came out of the oven and it is so moist and fragrant. It is sweet enough, but not overly so, with a nice edge of sour bitterness from the orange and lemon peels. Andy and I stole a tiny slice (just to see how it tasted), though we’ll serve it tomorrow to friends. Lucky friends.

Molly from Orangette promises it will be even better the next day. Thanks to her for the recipe.

In the first shot you can see the toasted and ground almonds, the pulpy mashed citrus and, yep, olive oil that give this cake it’s namesake.

& one more thing: what this dessert lacks in appearance–in bravado and panache–it makes up for in flavor.
